Coffee in Spain vs. coffee in US

Is there something different about the way coffee is prepared in Spain vs in America? I live in the states and I love the taste of coffee but so frequently when I drink it I just get the worst anxiety and jitters, so I tend to avoid it.
This spring I went to Spain for the Camino and ended up drinking some coffee. I was really hesitant because I didn’t want to feel like crap all day. I was dreading the moment the coffee poops and anxiety kicked in but they never did. I continued to have coffee each day and it felt like a miracle that I never got any of the bad side effects I normally do when I get coffee in the states.
Is there an explanation for this? I assumed that the beans were just of better quality, but we import most of our beans in the US so that wouldn’t make a ton of sense.
I just want to find a way to drink cappuccinos at home and not ruin the rest of my day 😭
Top Comment: I humbly propose that you may be overthinking it - when vacationing in Europe most Americans will find themselves walking outdoors substantially more than they normally do. You may very well feel less effects of coffee for the same reason people mysteriously don't gain weight when eating tons of bread every day in Europe. If we all walked 12k steps every day and were psychologically engaged with a sense of wonder during our normal lives, we'd probably all do better with weight and anxiety. TL;DR: your probably handling coffee because your metabolism is through the roof and your body is using the energy boost in more productive ways.
How do you choose between coffee or espresso everyday?

So I've gotten myself in this dilemma where I have lots of pour over toys and an espresso machine. I know there are other people in this situation so I wanted to ask how do you guys decide if you want coffee or espresso everyday? My concern is that if I don't drink either fast enough, the beans go stale.
